Becca comes to visit 3/21-3/22

Out to eat at Rubios in Vacaville...the salsa bar was awesome! But the best part of all was the company! Sister time!!!

this Argentine style pizza has boiled eggs, ham, sweet onions, bell peppers, pizza sauce, mozzy cheese, and green Spanish olives. Was yum-o!

Fast and Easy Appetizer

1 pound small shrimp
1-2 pounds bacon
toothpicks
Kris's BBQ Sauce

Take the shrimp, cut a piece of bacon to go around shrimp, secure with toothpick. Repeat till all bacon and shrimp are done. Broil in oven on cookie sheet lined with foil (for easy clean-up) for 10-15 mins or till bacon cooks completely. After out of oven, coat with bbq sauce. Its a big party hit, with a little bbq sauce on the side to dip in.

*Warning, people will ask for recipe, have it handy!*

Kris's BBQ Sauce

Don't give this out to too many people, its my "secret" recipe!

2 T crushed garlic
1 t onion powder
1/4 c. ketchup
1 t mustard
1-2 T brown sugar
1/2 t black pepper
dash of salt
dash of hot sauce, I use Cholula or Pico Pica
1/4 c. Kraft or other prepared bbq sauce

Mix together in a small bowl, taste, add more brown sugar or hot sauce to taste.

Disclaimer: *I never actually measure these ingredients, this is about what I use, lol.

Kris's Famous York Peppermint Patty Fudge

1 regular sized bag York Peppermint Patties, unwrapped (don't use sugar free)
1 c. semi-sweet chocolate chips (not sugar free)
14 oz can sweetened condensed milk (NOT Evaporated)
2 c. mini marshmallows
1 t vanilla

1. Line a 9x9 inch baking square baking pan with foil.
2. Melt peppermint patties and choco chips on medium low heat till almost melted.
3. Add sweetened cond. milk. Cook 1-2 mins on low heat.
4. Add marshmallows, a handful at a time. Allow to melt a for a minute before adding more.
5. Remove from heat.
6. Add vanilla and mix for about 15 seconds.
7. Pour into baking pan.
8. Put in fridge for 1-2 hours. Cut and store in air-tight container. Can freeze, will store in freezer for up to a month.

I like to make it fancy, so I mix 2T shortening, 1 drop green food coloring, and 1-2 drops of peppermint in a small bowl. Melt in microwave for 15-20 seconds. Drizzle on top of fudge about 15 mins. before serving.

Pico Pica Chili

1 1/2 lbs. ground beef or ground turkey
1/2 c. bell pepper (optional)
1/4 c. sweet onion or 2 t onion powder
1 packet of chili seasoning, mild
1-2 T Pico Pica or another brand of hot sauce
2 -8 oz cans tomato sauce
2 -15 oz cans beans, I use kidney or pinto
1 finely diced Roma tomato
Salt
Pepper
Chili powder
1/4-1/2 c. Mexican blend cheese, shredded

Step 1:
In a fry pan, add meat, bell pepper, and onion. Brown.

Step 2:
Follow instructions on chili spice packet. Do not add tomato sauce yet.

Step 3:
In a 4 qt. or larger sauce pot, add meat mixture and Pico Pica. Mix well.

Step 4:
Add tomato sauce, beans, and tomato. Stir well. Turn up heat on stovetop to medium.

Step 5:
Cook for 15 mins, stirring occasionally. Add salt, pepper, extra Pico Pica, and additional chili powder to taste.

Step 6:
Just before serving, add shredded Mexican blend cheese. Top with sour cream, if desired.





Stuffed Chicken Breasts

4 boneless skinless chicken breasts cut butterfly lengthwise
3 T dijon mustard
1/4 c. light mayo (miracle whip will work, I guess)
minced garlic to taste, I use about a tablespoon
1 t onion powder
1/2 t salt
1/2 t pepper
1/4 c. shredded colby jack or cheddar cheese
1-2 pieces of turkey bacon or regular bacon, minced
1/2 c. bread crumbs
1/2 t basil
1/2 t Pappy's spice or seasoned salt
2 T extra virgin olive oil

Put a fry pan on the stove on medium low, add olive oil to pan. Mix together in a small bowl the dijon mustard, mayo, garlic, onion powder, salt, pepper, cheese, and bacon. Set aside.

On a plate or pie tin mix together with fingers bread crumbs, basil, and Pappy's. Put the crumb mixture on counter and put the dijon mustard mixture right before it.

Preheat oven at 400 degrees. Foil line a cookie pan. Spray lightly with Pam or other pan spray. Set beside fry pan.

Take a chicken breast, stuff with dijon mixture. Follow with breading both sides of chicken with bread crumb mixture. Set in fry pan. Brown in fry pan for 2 minutes on each side. Set on cookie pan. Repeat with each chicken breast.

Bake for 20-25 mins. Cheese will be melting out onto cookie sheet. Serve with baked or mashed potatoes.

Kids new school pics 2009-2010 school year


Kristy's Meatloaf

1/2 small sweet onion minced
2 T garlic minced or crushed
1/4 c. bell pepper minced
2 T shredded carrot

Saute above in fry pan with about 1 T of extra virgin olive oil till slightly brown, about 5 mins. Set aside.

2 lbs. ground turkey or lean ground beef
1/2 c. ketchup
1/4 c. Famous Dave's BBQ Sauce, or other spicy bbq sauce
1/2 c. crushed crackers (I use Ritz)
1 egg
1/2 c. mild or medium cheddar cheese shredded
1 t worcestershire sauce

Mix meat, ketchup, and Famous Dave's in medium mixing bowl using hands. Add crackers and egg. Add sauteed veggies. Mix well, with hands. Add cheese and worcestershire sauce. Mix again using hands. Put in bread pan. Top with ketchup. Bake at 375 for 40-45 mins.




Lemon Bars Recipe

Crust:
1 c. butter
1/2 c. sugar
2 c. flour

Mix all using your hands, no spoons. When gets well mixed but still crumbly, press into greased 13x9x2 pan. Bake in preheated 350 degree oven for 15 mins. or till lightly brown.

Filling:
4 eggs
1 1/2 c. sugar or 1/2 c. sugar 1 c. Splenda or other sweetner
1/2 c. flour
juice from 2 fresh lemons

In mixing bowl, whisk eggs and sugar. Slowly add flour and lemon juice. Whisk till slightly frothy, about 2 mins.

Add egg mixture to warm crust. Bake for another 20 mins. Immediately dust with sifted powdered sugar. Let stand for 10-15 mins. before serving.
